BURRATA FROM ANDRIA
Burrata di Andria is an I.G.P. cheese. of cow’s milk, stretched curd, bag-shaped with the characteristic apical closure. Its soft and stringy filling is made up of strings of spun pastry and cream which together are called stracciatella.EXTRA VIRGIN OLIVE OIL
Olive oil is a food oil extracted from olives, or the fruits of the olive tree (Olea europaea). The virgin type is obtained from the mechanical pressing of olives. An original product of the Mediterranean agri-food tradition, olive oil is also produced in other regions with a Mediterranean climate. Extra virgin olive oil, also called “EVO”, is obtained by extraction using only mechanical methods.

GARGANO CAPER
A native variety of the Gargano area, Capparis spinosa is bushy, with slender, pendulous branches and thick, rounded leaves. The buds are deep green, similar to peas but larger. Once harvested they are left to mature in brine, covered with coarse salt and mixed for a few days. The widespread presence of limestone cliffs makes the caper a very widespread species on the Gargano.ORECCHIETTE FROM PUGLIA
Orecchiette are a type of pasta typical of the Puglia and Basilicata regions, whose shape is approximately that of small ears, from which the name derives. Those cooked with vegetables are preferably larger and those cooked with ragù are much smaller. A typical recipe spread between Puglia and Basilicata is that of orecchiette with turnip tops. An Apulian variant involves the addition of anchovies, while, in Basilicata, and mostly in Vulture and Matera, the dish is often seasoned with crumbled or powdered crusco pepper. Obviously, orecchiette with tomato are also very popular.

The Margherita di Savoia onion and potato are typical Apulian excellences known and appreciated throughout the world. They are grown on the sandy shores, a sandy soil between the sea and the salt pans which makes them unique.
